Pineapple and Rosemary Glazed Ham
The ham generally refers to the cut of meat from a hog's hind leg between the shank and the hip bone. There actually is such a thing as fresh ham, although what we think of is usually cured ham. Many factors contribute to the meat's taste, including what the animal was fed and the spices used in curing the ham. Aficionados can quote chapter and verse for this cut of pork nearly the same way sommeliers describe their wines, but at the end of the day, ham, coated with mustard, pineapple and rosemary as it is here, or prepared some other way, is good eatin'.
